Refrigerate: Cool, cover, and refrigerate for up to 3 weeks.
Can: Use the boiling-water method. Release trapped air. Wipe the rims clean; center lids on the jars and screw on jar bands. Process for 15 minutes. Turn off heat, remove canner lid, and let jars rest in the water for 5 minutes. Remove jars and set aside for 24 hours. Check seals, then store in a cool, dark place for up to 1 year.
RISTRAS
Ristras, which are strands of dried chilies, are often used as decorations, but they’re also a practical way to have a little heat on hand. Just clip off a pepper and toss into soups and stews or a pot of simmering beans, or grind into a powder to flavor any dish. The traditional method calls for braiding the chilies, but I’ve had great success with this simpler method.
